I can make the best vegan potato pizza boats...

Bake two russet potatoes. Slice in half. Scoop out the insides. Add tomato sauce. Sprinkle with fennel, oregano and basil. Add a layer of hummus. Add pizza toppings (such as chopped cherry tomato, red onion, garlic, black olive, basil). Bake at 400 for twenty minutes or so. Sprinkle with Trader Joe's Mushroom Umami Seasoning. 

So good. They are in two stomachs now.
